How to identify delimiters in case not mentioned in Hive table description

No details for the delimiters in this command:
If not mentioned, should we always consider it as ‘\001’ ?

Yes you are correct, if no delimiter specified in describe command then it is default one i.e. \001 (null character) as you mentioned.
